Slow Cooking Lubiyeh with Lamb

This green bean stew is an authentic middle eastern homestyle stew called Lubiyah. It is made from garden fresh tomatoes and crispy green beans, loaded with classic Middle Eastern flavours, and it’s super healthy too.

This dish isn’t limited to just the summer you can make this all year round just substitute the fresh tomatoes for canned whole tomatoes and the green bean for frozen.

The method I use for this classic bean stew certainly is unorthodox. I decided to use a slow cooker to make this dish vs the usual stove top method.

Yes, I’m sure the purest are thinking….”no, no that’s cooking to taste terrible and bland in the cook cooker.” The trick to making this recipe is to is to caramelise the onion and steer the meat before adding it to the slow cooker, then add 11/2 cup of water to the pot you used for the onions and meat, let the water boil, then add to the slow cooker this tip will result in a more flavourful meal vs the bland taste we all loathe.

But I promise you it comes out is quite extraordinary.

Slow cooking Lubiyah with Lamb

This green bean stew is an authentic middle eastern homestyle stew called Lubiyah. It is made from garden fresh tomatoes and crispy green beans, loaded with classic Middle Eastern flavours, and it’s super healthy too.

  • 1 vine ripened tomatoes peeled and chopped
  • 1 potato peeled and quartered
  • 1 carrot peeled and chopped
  • 2 cups of green beans
  • 1/2lb(250g)of lamb
  • 1 tbsp of olive oil
  • 1 medium onion chopped
  • 11/2 cup of water
  • 1 tbsp tomato paste
  • 1/2 tsp harissa or red pepper paste*
  • 1 tsp turmeric
  • 1/4 tsp crush coriander seeds
  • 1/4 tsp cinnamon
  • 1 tsp 7 spice*
  • 2 garlic cloves
  • 2-3 tbsp of chopped cilantro or parsley


  1. Heat olive oil on medium high heat in a small pot then add the chopped onion allow the onion to saute for 5-7 minutes remove onion from the pot into the slow cooker. Then add lamb meat to the small pot add salt, pepper and crushed coriander seed to the meat and brown all sides. Once the meat is browned place it in the slow cooker with the onions. add 11/2 cups water to the pot and stir to remove the oils and flavour from the pot. Add this water to the slow cooker.
  2. Add all your prepared vegetables to the slow cooker.
  3. Add the tomato paste, harissa, turmeric & cinnamon. Lightly stir to combine the ingredients.
  4. cook on high for 3 hour or 5 hours on low.
  5. 10 minutes before serving, add the grated garlic, 7 spice, and cilantro

* Red pepper paste is a common ingredient in middle eastern cooking you can find it in the middle eastern food isle in most well stocked stored

* 7 spice is a mixture very commonly used in Lebanon, Syria & Palestine it usually consist of cloves, cinnamon, allspice, nutmeg, fenugreek, pepper, & ginger. You can substitute for ras-hanout, or any other Bharat(middle eastern spice blend)
